Butter Pecan Cookies Recipe - Gluten Free and Grain Free

Our gluten free and grain free Butter Pecan Cookies are so big and buttery, you'll only be able to have one or two at a sitting. If you like soft cookies, store them in the refrigerator and serve them at room temperature. For chewy cookies, eat them right out of the refrigerator or freezer. For crunchy cookies, bake them again at 170 F (75 C) for 2 hours after they've cooled. Store crisp cookies in an airtight container.

  • 2 cups almond flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cup chopped pecans
  • ½ teaspoon pure vanilla extract
  • 1 ½ whole egg
  • ½ cup unsalted better, softened
  • ⅓ cup honey

Instructions

  1. Heat the oven to 325°F (160°C). Line a cookie sheet with parchment paper.
  2. Combine the almond flour, cinnamon, salt, baking soda and pecans in a bowl.
  3. Combine the vanilla, egg, butter, and honey in another bowl.
  4. Add the dry ingredients to the wet and mix well.
  5. Drop heaping 2-tbsp-sized (25 mL) portions of the batter about 2 inches (5.5 cm) apart on the cookie sheet.
  6. Bake for 10 to 12 minutes or until the cookies are lightly browned.
